🍑 Peaches & Cream Loaf
Ingredients
For the loaf:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs
-
½ cup sour cream or Greek yogurt
-
1 tsp vanilla extract
-
1 cup fresh or canned peaches, chopped (drained well if canned)

Optional: ¼ tsp cinnamon or nutmeg for a warm spice note
For the cream cheese swirl:

4 oz cream cheese, softened
-
3 tbsp granulated sugar

1 tbsp all-purpose flour
-
1 egg yolk
-
½ tsp vanilla extract
Instructions

Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

Make the cream cheese filling:
In a small bowl, beat the cream cheese, sugar, flour, egg yolk, and vanilla until smooth. Set aside. -
Make the batter:

In a medium bowl, whisk together flour, baking powder, baking soda, and salt (plus cinnamon/nutmeg if using).

In a large bowl, beat butter and sugar until light and fluffy.

Add eggs one at a time, beating well.

Mix in sour cream and vanilla.

Gradually stir in the dry ingredients until just combined.

Fold in the chopped peaches gently.

Assemble the loaf:

Pour half the batter into the prepared loaf pan.

Spoon the cream cheese mixture over the batter and gently spread.

Top with the remaining batter and swirl lightly with a knife for a marbled effect (optional).

Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay, but no wet batter).

Cool in the pan for 15 minutes, then remove to a wire rack to cool completely.

Glaze: Drizzle with a vanilla or cream cheese glaze once cooled.
