🍑 Peaches & Cream Loaf

Ingredients

For the loaf:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • ½ cup sour cream or Greek yogurt

  • 1 tsp vanilla extract

  • 1 cup fresh or canned peaches, chopped (drained well if canned)

  • Optional: ¼ tsp cinnamon or nutmeg for a warm spice note

For the cream cheese swirl:

  • 4 oz cream cheese, softened

  • 3 tbsp granulated sugar

  • 1 tbsp all-purpose flour

  • 1 egg yolk

  • ½ tsp vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  2. Make the cream cheese filling:
    In a small bowl, beat the cream cheese, sugar, flour, egg yolk, and vanilla until smooth. Set aside.

  3. Make the batter:

    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt (plus cinnamon/nutmeg if using).

    • In a large bowl, beat butter and sugar until light and fluffy.

    • Add eggs one at a time, beating well.

    • Mix in sour cream and vanilla.

    • Gradually stir in the dry ingredients until just combined.

    • Fold in the chopped peaches gently.

  4. Assemble the loaf:

    • Pour half the batter into the prepared loaf pan.

    • Spoon the cream cheese mixture over the batter and gently spread.

    • Top with the remaining batter and swirl lightly with a knife for a marbled effect (optional).

  5. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay, but no wet batter).

  6. Cool in the pan for 15 minutes, then remove to a wire rack to cool completely.


🍰 Optional Add-Ons

  • Glaze: Drizzle with a vanilla or cream cheese glaze once cooled.

  • Topping: Sprinkle coarse sugar or chopped pecans on top before baking for texture.
