Cinnamon roll casserole

Here’s a  Cinnamon Roll Casserole recipe that’s easy to follow and perfect for breakfast, brunch, or even dessert. It uses store-bought cinnamon rolls for convenience, but you can also use homemade dough if you prefer.

🧾 Ingredients:

For the casserole:

  • 2 cans refrigerated cinnamon rolls (like Pillsbury Grands, 8-count each)

  • 4 large eggs

  • ½ cup heavy cream (or whole milk)

  • 2 tsp vanilla extract

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • 3 tbsp maple syrup or honey

  • ¼ cup melted butter (unsalted)

For the glaze (optional if using included icing):

  • ½ cup powdered sugar

  • 1–2 tbsp milk or cream

  • ½ tsp vanilla extract


🍳 Instructions:

1. Preheat the Oven

  • Set your oven to 350°F (175°C).

  • Grease a 9×13-inch baking dish with nonstick spray or butter.

2. Cut Cinnamon Rolls

  • Open both cans of cinnamon rolls and set aside the icing for later.

  • Cut each roll into quarters (bite-sized pieces).

  • Scatter the cut-up pieces evenly across the baking dish.

3. Make the Custard Mixture

In a medium bowl, whisk together:

  • 4 eggs

  • ½ cup heavy cream

  • 2 tsp vanilla

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (if using)

  • 3 tbsp maple syrup or honey

Whisk until fully combined.

4. Assemble the Casserole

  • Pour the egg mixture evenly over the cinnamon roll pieces in the dish.

  • Drizzle the ¼ cup melted butter over everything.

  • Gently press down on the rolls to help soak them slightly.

5. Bake

  • Cover loosely with foil and bake for 30 minutes.

  • Uncover and bake an additional 10–15 minutes until the top is golden and the center is set (no longer jiggly).

  • Optional: insert a knife in the center—it should come out mostly clean.

6. Add Icing or Glaze

  • While warm, drizzle the reserved cinnamon roll icing (you can warm it in the microwave for a few seconds).

  • Or mix up your own glaze by combining:

    • ½ cup powdered sugar

    • 1–2 tbsp milk

    • ½ tsp vanilla

Drizzle over the casserole.


🧁 Optional Add-ins:

  • Chopped pecans or walnuts (sprinkle on before baking)

  • Raisins or chopped apples for a fruity twist

  • A touch of cream cheese in the glaze for richness


✅ Tips:

  • For crispier edges, bake a few minutes longer uncovered.

  • This can be prepared the night before—assemble, cover, refrigerate, and bake in the morning.

  • Serve with fresh fruit or bacon/sausage for a full breakfast.
