Bake Mango Pie

🥭 Baked Mango Pie Recipe

Prep time: 20 minutes
Bake time: 45 minutes

📋 Ingredients

For the crust (or use a pre-made pie crust):

  • 1 ¼ cups all-purpose flour

  • ½ cup (1 stick) cold unsalted butter, cut into cubes

  • 2–3 tbsp ice water

  • 1 tbsp sugar

  • ¼ tsp salt

For the mango filling:

  • 2 to 3 ripe mangoes (about 2 cups chopped or sliced)

  • ½ cup sugar (adjust to sweetness of mangoes)

  • 1 tbsp cornstarch (or arrowroot powder)

  • 1 tbsp lemon or lime juice

  • ½ tsp cinnamon (optional)

  • 1 tsp vanilla extract


🍰 Instructions

1. Make the Pie Crust

  • In a bowl, mix flour, sugar, and salt.

  • Add cold butter and cut in with a pastry cutter or fork until crumbly.

  • Add ice water gradually until the dough just comes together.

  • Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

2. Prepare the Filling

  • Peel and slice mangoes into small pieces.

  • In a bowl, combine mangoes with sugar, cornstarch, lemon juice, cinnamon (if using), and vanilla. Mix gently.

3. Assemble the Pie

  • Preheat oven to 375°F (190°C).

  • Roll out the chilled dough and place it in a 9-inch pie dish.

  • Pour the mango filling into the crust and spread evenly.

  • Optionally, add a lattice top or full crust topping (cut slits to vent).

4. Bake

  • Bake for 40–45 minutes or until the crust is golden brown and filling is bubbling.

  • If the edges brown too quickly, cover them with foil halfway through.

5. Cool and Serve

  • Let the pie cool for at least 1 hour before serving.

  • Serve plain or with a scoop of vanilla ice cream or whipped cream!
