Here’s a small, no-bake vanilla pudding recipe that’s quick, easy, and perfect for 2–3 servings. It’s creamy, rich, and doesn’t require any eggs or oven time!
🍮 Small No-Bake Vanilla Pudding Recipe
📝 Ingredients:
-
2 tablespoons granulated sugar
-
1 tablespoon cornstarch
-
1/8 teaspoon salt (a small pinch)
-
1 cup whole milk (or 2% for a lighter version)
-
1/2 teaspoon pure vanilla extract
-
1 tablespoon unsalted butter
Optional toppings: whipped cream, berries, crushed cookies, or a sprinkle of cinnamon
👩🍳 Instructions:
1. Mix dry ingredients
In a small saucepan (off the heat), whisk together:
-
2 tbsp sugar
-
1 tbsp cornstarch
-
A pinch of salt
This helps prevent lumps when you add the milk.
2. Add milk
Gradually whisk in 1 cup of milk, ensuring the mixture is smooth.
3. Heat it up
-
Place the saucepan over medium heat.
-
Stir constantly with a whisk or spoon (don’t walk away!). After about 5–7 minutes, the pudding will start to thicken.
-
Once it starts to bubble gently and coats the back of a spoon, cook for 1 more minute, then remove from heat.
4. Add butter & vanilla
-
Stir in 1 tbsp butter and 1/2 tsp vanilla extract.
-
Mix until the butter is fully melted and everything is smooth.
5. Cool and serve
-
Pour the pudding into small cups or ramekins.
-
Let it cool at room temperature for 5–10 minutes, then cover with plastic wrap (press it directly on the surface if you want to avoid skin forming).
-
Chill in the fridge for 30 minutes to 1 hour, or enjoy warm if you like it that way.
🍓 Serving ideas:
-
Top with whipped cream and fresh berries
-
Crushed graham crackers or cookies for crunch
-
A dusting of cocoa powder or cinnamon
