🌟 Best-Ever Pepper Steak

🕒 Prep Time: 15 min

🕒 Cook Time: 15 min
🍽️ Servings: 4

🥩 Ingredients

For the Steak:

  • 1 ½ lbs flank steak or sirloin, thinly sliced against the grain

  • 2 tbsp soy sauce

  • 1 tbsp cornstarch

  • 1 tbsp vegetable oil (for cooking)

For the Sauce:

  • 3 tbsp soy sauce (low sodium preferred)

  • 2 tbsp oyster sauce

  • 1 tbsp hoisin sauce (optional, for sweetness)

  • 1 tbsp rice vinegar or apple cider vinegar

  • 1 tbsp brown sugar

  • ¾ cup beef broth (or water with bouillon)

  • 1 tbsp cornstarch (for thickening)

For the Stir-Fry:

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 3 garlic cloves, minced

  • 1-inch piece of ginger, grated (optional but recommended)

  • 1–2 tsp freshly ground black pepper (adjust to taste)

  • 2 tbsp vegetable oil or sesame oil (for stir-frying)

  • Green onions & sesame seeds (for garnish, optional)

🔪 Instructions

1. Marinate the Beef

In a bowl, toss sliced beef with 2 tbsp soy sauce and 1 tbsp cornstarch. Let it sit for 10–15 minutes while you prep the other ingredients.

2. Prepare the Sauce

In a small bowl, mix all sauce ingredients:

  • Soy sauce, oyster sauce, hoisin (if using), vinegar, brown sugar, beef broth, and 1 tbsp cornstarch. Stir until smooth.

3. Sear the Beef

Heat 1 tbsp oil in a large skillet or wok over high heat. Add beef in a single layer (in batches if needed), sear for 1–2 minutes per side until browned. Remove and set aside.

4. Cook the Veggies

In the same pan, add another tbsp oil. Add garlic, ginger, onions, and bell peppers. Stir-fry for about 2–3 minutes, keeping them slightly crisp.

5. Combine & Simmer

Return beef to the pan. Stir in the sauce and lots of freshly ground black pepper. Cook everything together for 2–3 minutes, until the sauce thickens and coats everything.

6. Serve

Serve hot over steamed white rice, fried rice, or noodles. Garnish with sliced green onions or sesame seeds if desired.

💡 Tips

  • Cut against the grain: This makes the beef extra tender.

  • Use a hot wok/skillet: High heat ensures a great sear and keeps veggies crisp.

  • Add heat: Add a sliced chili or crushed red pepper if you like it spicy.
