Easy Coconut Blender Cake

Here’s a simple and delicious recipe for a Coconut Blender Cake! The great part is that you make the batter in a blender, so it’s quick and easy to prepare.

Ingredients:

  • 1 cup shredded coconut (unsweetened)

  • 1 cup sugar (granulated)

  • 4 large eggs

  • 1/2 cup butter (softened)

  • 1/2 cup milk

  • 1 teaspoon vanilla extract

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 cup all-purpose flour

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C) and grease an 8×8-inch or 9×9-inch square baking pan, or line it with parchment paper.

  2. Blend Ingredients:
    In a blender, add the shredded coconut, sugar, eggs, butter, milk, and vanilla extract. Blend on high for about 30 seconds until everything is well combined and smooth.

  3. Add Dry Ingredients:
    Add the baking powder, salt, and flour to the blender. Pulse the blender a few times until the batter is smooth and well mixed.

  4. Pour and Bake:
    Pour the batter into the prepared baking pan, spreading it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  5. Cool and Serve:
    Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Once cooled, cut into squares and serve!

Optional Toppings:

  • A sprinkle of shredded coconut on top before baking

  • Powdered sugar dusting after baking

  • A drizzle of chocolate or caramel sauce
