5-Minute Coconut Butter Cookies

Here’s a  recipe for Coconut Butter Cookies that takes about 5 minutes of prep time and just a few more minutes to bake. These are gluten-free, dairy-free, and incredibly simple to make with minimal ingredients. Perfect for a quick treat!

📝 Ingredients:

Ingredient Quantity Notes
Coconut butter 1/2 cup (120g) Softened, not melted
Maple syrup or honey 3 tbsp Adjust to taste
Vanilla extract 1 tsp Optional, adds nice flavor
Shredded coconut 1/4 cup (optional) Unsweetened, for texture
Almond flour 1/2 cup (50g) Or coconut flour (see notes)
Baking soda 1/4 tsp Helps them rise slightly
Salt A pinch Enhances sweetness

🥣 Instructions:

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).

  • Line a baking sheet with parchment paper.


2. Mix Wet Ingredients

  • In a mixing bowl, add:

    • 1/2 cup coconut butter

    • 3 tbsp maple syrup or honey

    • 1 tsp vanilla extract (optional)

  • Mix well until smooth and creamy. Coconut butter should be soft, not melted. If it’s too hard, gently warm it in a water bath or microwave for 10–15 seconds.


3. Add Dry Ingredients

  • To the bowl, add:

    • 1/2 cup almond flour

    • 1/4 tsp baking soda

    • Pinch of salt

    • (Optional) 1/4 cup shredded coconut for texture

  • Stir until a dough forms. It should be thick and scoopable. If too dry, add a teaspoon of coconut oil or a splash of plant milk.


4. Shape the Cookies

  • Scoop about 1 tablespoon of dough and roll it into a ball.

  • Place on the baking sheet and flatten slightly with your fingers or a fork.

  • Leave a little space between cookies – they won’t spread much.


5. Bake

  • Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden.

  • Be careful not to overbake – they firm up as they cool.


6. Cool

  • Let the cookies cool on the baking sheet for 10 minutes.

  • They will be soft right out of the oven but will set as they cool.


🔁 Variations & Add-ins

  • Chocolate chip: Add mini dark chocolate chips to the dough.

  • Lemon zest: For a citrusy version.

  • Spices: Add a dash of cinnamon or cardamom.

  • Drizzle: Top with melted dark chocolate or coconut glaze.


🍽 Storage

  • Store in an airtight container at room temperature for 3–4 days, or refrigerate for longer freshness.

  • They can also be frozen.
