πŸ•’ Prep Time: 15 minutes

πŸ•’ Cook Time: 25–30 minutes
🍽 Servings: 12–16 puffs (depends on size)

βœ… Ingredients:

  • 2 cups leftover mashed potatoes (cold or room temperature)

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 1/4 cup grated Parmesan cheese

  • 2 large eggs

  • 1/4 cup all-purpose flour (or use breadcrumbs for extra crispiness)

  • 2 tablespoons chopped chives or green onions (optional)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper, to taste

  • Oil or butter, for greasing (if baking)

  • Breadcrumbs (optional, for coating or mixing in for extra crunch)

πŸ”§ Optional Add-ins:

  • Cooked crumbled bacon

  • Finely chopped jalapeΓ±os

  • Paprika or smoked paprika for flavor

  • A dash of hot sauce

πŸ‘©β€πŸ³ Instructions:

Oven-Baked Version:

  1. Preheat Oven: Preheat to 400Β°F (200Β°C). Lightly grease a muffin tin or baking sheet with oil or butter.

  2. Mix the Base: In a large mixing bowl, combine:

    • Mashed potatoes

    • Shredded cheese

    • Parmesan

    • Eggs

    • Flour

    • Chives/green onions

    • Garlic powder, onion powder

    • Salt and pepper to taste

Mix until smooth and evenly combined. If too soft, add a tablespoon or two of breadcrumbs or more flour.

  3. Shape:

    • For muffin tins: Scoop mixture into each muffin cup, filling about 3/4 full.

    • For freeform puffs: Scoop 1–2 tablespoons and roll into balls, optionally coat with breadcrumbs, and place on a greased baking sheet.

  4. Bake:

    • Muffin tin: Bake for 25–30 minutes, or until golden brown and puffed.

    • Baking sheet: Bake 20–25 minutes, flipping halfway if needed for even browning.

  5. Cool Slightly & Serve: Let rest 5 minutes before serving. Great with sour cream, ranch, or a spicy dipping sauce.

Fried Version (Extra Crispy):

  1. Shape mixture into balls or patties and optionally coat with breadcrumbs.

  2. Heat 1/2-inch oil in a skillet over medium-high heat.

  3. Fry each side 2–3 minutes or until golden and crispy.

  4. Drain on paper towels and serve hot.

πŸ“ Tips:

  • If your mashed potatoes are very soft or creamy, add extra flour or chill the mixture to help them hold shape.

  • Use a mini muffin tin for bite-sized party snacks.

  • Add chopped herbs for freshness or flavor.
