Apple-Rhubarb Bread Recipe

Here’s a delicious Apple-Rhubarb Bread recipe — perfect for using fresh rhubarb and tart apples in a moist, flavorful loaf!


🍞 Apple-Rhubarb Bread Recipe
Yields: 1 loaf

Prep Time: 15 minutes
Cook Time: 55–65 minutes


Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • ½ cup vegetable oil (or melted butter)

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup finely chopped rhubarb (fresh or frozen)

  • 1 cup peeled and diced apple (Granny Smith or another tart variety)

  • ½ cup chopped nuts (walnuts or pecans, optional)


Optional Topping:

  • 2 tbsp brown sugar

  • ½ tsp cinnamon


Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

  3. Mix wet ingredients: In a large bowl, beat together the oil, sugar, eggs, and vanilla until smooth.

  4. Combine: Gradually stir the dry ingredients into the wet mixture until just combined. Don’t overmix.

  5. Fold in the rhubarb, apple, and nuts (if using).

  6. Pour into loaf pan and smooth the top.

  7. Optional topping: Mix brown sugar and cinnamon, then sprinkle over the batter.

  8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, loosely tent with foil.

  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
